Chicken Tortilla Soup

Ingredients

1 cup tomatoes diced

1 cup onion diced

1/2 cup zucchini diced

1/2 cup yellow squash diced

1 cup green peppers minced

2 jalapeno peppers

1 bunch Cilantro

4 cups chicken stock

1 tomato juice (from diced tomatoes)

1 can V8 juice

2 potatoes peeled and diced

2 boneless skinless chicken breast

1 Salt

pepper

Tortilla chips

1 Avocado


Directions

Mix chicken stock, tomato juice, and V8 juice in a crock pot. Add tomatoes and chicken Add cilantro and vegetable mix. Season to taste Cook on high heat for 4 hours Can also be prepared in a large saucepan Add chips and sliced avocado to finished soup bowl
