Chicken Vegetable Stir Fry

Ingredients

1 Chicken breast cubed

2 tablespoons oil

2 tablespoons water

1 tabelespoon cornstarch

1/4 cup Chicken broth

1/2 tsp Red pepper flakes to taste

1 red bell pepper chopped

2 small heads of broccoli cut into bite sized pieces

10 baby carrots cut into bite sized pieces

1/2 tablespoon ginger minced (or 1/4 dried ginger)

1 tablespoon garlic

1.4 cup honey


Directions

Cook chicken in skillet with 2 T. oil until done. Take out of pot and set aside. Sauce Whisk water and cornstarch to make a slurry (used to thicken) until no lumps seen. Add chicken broth, honey, and whisk. set aside. Veggies Add veggies to pot with garlic and ginger. Cook 4-5 minutes until softened. Add chicken and sauce. Stir and continue cooking to thicken. Serve over white rice.
