Ingredients

1 bunch celery - or about 2 cups chopped celery

3-4 carrots or about 1 cup

1 bunch of elephant kale chopped or about 4 cups

1 red bell pepper chopped

1 yellow onion chopped

2 tbsp minced garlic

1 tbsp butter

2 sprigs fresh thyme

1/2 cup dry white wine

6 cups low sodium chicken broth

2.5 lbs chicken cubed ( i used a combination of breast and

1 cup frozen peas

1/3 cup flour + 1/2 cup broth to create a paste

3 bay leaves

1/4 cup milk

salt and pepper to taste

2 cups AP flour

1 1/3 cup buttermilk

3 tsp baking powder

1 tsp salt

1 tsp pepper

3 tbsp chopped fresh chives
