Chicken with Sun Dried Tomatoes

Ingredients

3 tablespoons Olive oil

1 pound Chicken breast cut into bite size chunks

1 shallot finely chopped

1 can Campbell's condensed 98% fat free cream of mushroom soup

3/4 cup water

1/4 cup Sun-dried tomatoes thinly sliced

1 tablespoon red wine vinegar

2 tablespoon chopped fresh basil leaves

5 servings Noodles

1/4 cup Pecorino Romano or Parmesan cheese shredded

Thinly-sliced fresh basil leaves


Directions

1. Heat 2 tbsp oil in skillet over medium-high heat. Add chicken and cook 15 minutes or until well browned on both sides. Remove chicken from skillet. 2. Heat remaining oil in skillet over medium heat. Add shallot and cook and stir 2 minutes. Stir soup, water, tomatoes, vinegar and chopped basil in skillet. 3. Return chicken to skillet and heat to a boil. Reduce heat to low. Cook 5 min. or until chicken is cooked through. Add in cooked pasta . Stir to combine. Add cheese. 4. warm through 5. serve
