Chili-Mango Chicken

Ingredients

1 pound boneless chicken breasts 1/2" Pieces

1 tablespoon Corn starch

1 tablespoon Reduced-sodium soy sauce

1/2 tablespoon Sesame Oil

1/2 tablespoon Canola Oil

1 Red onion

1 tablespoon Ginger grated or minced

2 cups sugar snap peas

1 Mango peeled, pitted and chopped

1 tablespoon chilli garlic sauce Huy Fong

to taste Black Pepper


Directions

Combine chicken, cornstarch, soy sauce and sesame oil in mixing bowl and let flavors mingle for 10 minutes. In large pan, heat canola oil on high and add onion and ginger, cook untill onion is translucent (1-2 mins). Add peas and stir-fry for another minute. Finally add contents of mixing bowl and cook untill the chicken begins to brown, another two minutes. Finish up the dish by adding in the mango, chili garlic sauce and pepper. Continue cooking untill chicken is cooked through and mango becomes saucy, about 1 minute more. Serve over rice
