Chocolate-Chip Banana Muffins

Ingredients

1/2 c Oil, vegetable

1 ts Vanilla

1/2 ts Salt

2 c Flour

2 ts Baking powder

1/2 c Mini-chocolate chips

1 1/2 c Bananas very ripe

2 lg Eggs

1/2 ts Baking soda

2/3 c Sugar, brown packed


Directions

Preheat oven to 425 . Grease 12 muffin cups. Combine dry ingredients. Combine bananas, sugar, eggs, oil, and vanilla and stir into dry ingredients. Stir in chips. Spoon into cups. I think temp of oven could be lower. These were just ok. I will not make again.

I regularly make a double batch of these in the hope they will last more than an hour. The whole family love them, but I have to hide the choc chips from hubby until I've made them!

Yummy yummy!!!!! These were so easy to make and delicious! I did sift all the dry ingredients together as I added them to the wet ingredients. I also only baked mine for 15 minutes at 425. Will definitely make them again!!!!

The banana muffins came out really good. Kids polished them off in 2 minutes flat.
