1 cup dry

for cooking barley

2 cups fresh

2 tablespoons fresh squeezed

1 tablespoon


Directions

Prepare barley according to package directions using half chicken broth and half water. Puree cilantro, lime juice, and oil in a food processor until smooth. Stir puree into cooked barley and season with salt.
