Cilantro-lime Chicken with Avocado Salsa

Ingredients

2 tablespoon Cilantro minced and fresh

2 1/2 tablespoon Lime juice

1 1/2 tablespoon olive oil

4 Chicken breast skinless, boneless

1/4 teaspoon Salt

1 cup Plum tomatoes chopped

2 tablespoon Onion chopped

2 teaspoon Lime juiced

1/4 teaspoon Salt

1/8 teaspoon Black pepper ground

1 Avocado


Directions

1. To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. (longer time = more flavor). Remove chicken from marinade; discard marinade. Springle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done. 2. To prepare salsa, combine tomato and all ingredients except for avocado in a medium bowl. Add chopped avocado with care trying not to mush. Serve salsa over chicken.

So easy! Simple but full of taste! I also added bell pepper to the marinade

Marinated the chicken for an hour, added cumin. sautéed onion and red bell peppers in olive oil then added the chicken. (no salt, we are on a 2 gram sodium diet) Was so good. This is one of the best dinners with no salt. Didn't make the salsa.
