Clam Noodle Florentine

Ingredients

3 tablespoons margarine

1/4 cup chopped onion

3 tablespoons all-purpose flour

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1-1/2 cups light cream or milk

2 (6-1/2 ounce) cans minced or chopped clams drained, reserving 1/2 cup liquid

3 cups cooked medium noodles well-drained

1 (10 ounce) package frozen chopped spinach thawed and drained

1/4 cup grated Parmesan cheese

1/2 cup buttered bread crumbs


Directions

Preheat oven to 350F. In large saucepan, melt margarine. Add onion; cook until tender. Blend in flour, salt and pepper. Slowly stir in cream and reserved clam liquid. Cook and stir over medium heat 5 minutes or until mixture thickens. Add clams, noodles and spinach to sauce; blend well. Spoon half the noodle mixture and half the cheese into greased 1-1/2-quart baking dish; repeat layering. Top with crumbs. Bake 20 to 25 minutes or until hot.
