2 cups sugar

5 extra-large eggs at room temperature

1 1/2 teaspoons pure vanilla extract

1 1/2 teaspoons pure almond extract

3 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

1 cup buttermilk

14 ounces sweetened shredded coconut

1 pound cream cheese at room temperature

3/4 pound (3 sticks) unsalted butter room temperature

1 teaspoon pure vanilla extract

1/2 teaspoon pure almond extract

1 1/2 pounds confectioners' sugar sifted

These cupcakes came out very well. The amount of coconut flavor is perfect and cream cheese frosting is always yummy. My batch made 24 regular sized cupcakes and I baked them for 35 minutes. Half of the frosting was enough to cover ever cupcake well. I will be making these again!
