Preheat oven to 350. Line a baking sheet with parchment paper.
Whip eggs until fluffy, but not stiff.
Mix honey, vanilla, almond, coconut flakes, arrowroot and salt in a bowl. Fold in egg whites.
Drop mixture by tablespoon onto baking sheet, 1-2" apart.
Bake on middle rack for 12-15 minutes.
