Coconut Shrimp Deconstructed

Ingredients

# 10 Can Coconut Milk

# 10 Can Pineapple Tidbits

1/2 cup lobster or shrimp base

1/2 cup vegetable base

3 cups agave syrup

2 cups raw sugar

1 lb butter

3 cups flour

1 qt rum (white)

5 lb bag mango diced frozen

3 cups lime juice

8 cups raw coconut

10 lb 41-50 shrimp peeled and deveined


Directions

1. Melt butter in a sauce pot, once butter melts add flour and stir to combine and simmer on med heat for 2 minutes. 2. Add rum and rest of ingredients except for mango, coconut and shrimp and bring to a boil. 3. While sauce is simmering steam or boil shrimp until cooked through. 4. Remove sauce from stove and add mango 4. Place shrimp into cassarole dish and top with sauce and raw coconut and place in oven and toast until golden brown.
