Cod, parmesan mash and sun dried tomato dressing

Ingredients

# 4 pieces cod fillet

# 50g grated parmesan cheese

#450g cooked mashed potatoes

#130g creme fraiche

#1 tbsp extra virgin olive oil

#salt and pepper to taste

#juice 1/2 lemon

#2 tbsps sundries tomato paste

#6 sun dried tomatoes


Directions

1. wrap cod into individual tin foil parcels with a little oil and place in oven for 30-35 mins at 200 centigrade 2. add the parmesan, creme, half the olive oil and the seasoning to the mashed potatoes and mix together 3. mix the tomatoes, paste, oil and lemon juice together for the dressing put mash on a bed of leaves then top with the cod. Drizzle the dressing on top and serve hot.
