Colorful Veggie and Tortilla Dinner

Ingredients

1/4 cup water

1/4 cup brown rice

1 1/2 cups frozen veggies (peas, corn, green beans, carrots)

2 cans stewed tomatoes

1 can dark red kidney beans

1/4 cup Cilantro

1/2 medium Onion

Ground cumin

2 Garlic cloves

5 Soft wheat tortillas

1/4 cup fat free sour cream

Roma Tomatoes


Directions

In 2-quart saucepan, bring water to a boil. Stir in rice and return to boiling. Reduce heat, cover and cook 5 to 10 minutes. Stir in thawed veggies, stewed tomatoes, beans, cilatro, onion, cumin, coriander, garlic, and pepper. Cook until hot. Place warm tortillas on plates and spread on rice mixture. top with sour cream and salsa if desired.
