1. Soften ice cream 4 to 5 minutes at room temperature. 2. While ice cream softens, coarsely chop cookies with a knife. 3. With a large spoon, fold cookies into softened ice cream. Serve immediately. Serves 2 to 4. Variation: The choices are endless. Coffee and chocolate ice cream work well, as do chocolate chip, peanut butter, molasses, and oatmeal cookies.
