Country-Style Breakfast Casserole

Ingredients

Cooking spray

8 ounces low-fat smoked link sausage

2 Tbsp. maple syrup

2 pounds frozen country-style hash brown potatoes

2 cups fat-free milk

1 1/2 cups egg substitute

2 slices low-fat American cheese diced

1 /4 cup shredded Parmesan cheese or grated

1/2 tsp. dry mustard

1 /4 tsp. pepper

2 Tbsp. green onions green part, finely snipped, optional


Directions

Preheat the oven to 350 degrees F. Lightly spray a 13 x 9 x z-lncn baking pan with cooking spray. In a medium skillet, cook the sausage over medium­ high heat for 3 to 4 minutes, or until browned, turning occasionally. Remove from the skillet and cut into bite­ size pieces. Wipe the skillet with paper towels; Return the sausage to the skillet. Pour in the maple syrup. Cook for 1 minute, stirring to coat. Place the sausage in a single layer in the baking pan. Top with the potatoes. In a medium bowl, whisk together the remaining ingredients except the green onions. Pour over potatoes. Bake for 1 hour,or until the center is set (doesn't jig­gle when the pan is gently shaken). Sprinkle with the green onions. Let cool for at least 10 minutes before cutting.
