Preheat the oven.
Crush the garlic in a mortar anf pestle with the sea salt, until they form a paste.
Slowly add the olive oil to the paste until it is spreadable, but not too runny.
Dollop the garlic sauce unto the centre of the pizza base and spread outwards in a circular motion until the base is fully covered.
Sprinkle over a handful of mozzarella.
Grate the courgettes over the top until the whole surface is covered.
Sprinkle over the rest of the mozzarella, then top with pine nuts.
Bake for 8-12 mins, until golden, crispy and bibbling.
When serving, zest half the lemon over the top of the pizza, Squeeze 10-12 drops all over the pizza. Drizzle with olive oil, season with flaky sea salt and freshly ground black pepper.
