Cranberry Bread - High Altitude

Ingredients

2 cups White Flour

1 cup Granulated sugar

1 1/2 tsps baking powder

1 tsp salt

1/4 cup shortening

3/4 cup fresh orange juice

1 large egg beaten

1 tsp orange zest

1 cup Fresh cranberries coarsely chopped


Directions

Sift dry ingredients. Cut in the shortening with pastry blender or forks. Mix the orange juice, egg and orange zest and add, mixing with a fork until evenly moistened. Fold in the cranberries. Pour batter into a lightly greased 9 x 5 inch loaf pan. Bake for 1 hour at 350 degrees. Cool 10 minutes. Makes 1 loaf.
