These are a must have for Thanksgiving morning. They have been a tradition since 1984 when the prior Christmas Dad gave Mom her first Cuisinart. After the company he was working for went out of business and he started with a new company, before Christmas '83 he got a promotion and a raise and to celebrate went straight to Foleys and bought Mom the best Cuisinart he could find.
Preheat oven to 375. Generously grease muffin cups and dust with flour, shaking out excess. In a food processor; using the steel knife, process flour, walnuts, baking powder and salt until nuts are coarsely chopped, about 5 seconds. Transfer to medium bowl.
Using the medium slicer; place cranberries in feed tube and slice, using light pressure. Add to dry ingredients.
With the steel knife process sugar and eggs 1 minute, stopping once to scrape down sides of work bowl. Add butter and blend until smooth, about 1 minute. With machine running pour buttermilk and maple flavoring through feed tube and mix 10 seconds, Add dry ingredients, blend using 2 on/off turns. Run spatula around inside of work bowl to loosen mixture. Blend until just combined, using 1 or 2 on/off turns. Spoon 1/3 cup batter into each muffin cup. Bake until light brown and springy to touch, about 25 minutes. Immediately remove muffins from pan and transfer to rack. If using large muffin tins this will make 12 muffins.
