Crawfish Pirot

Delicious as a meal or an appetizer for a party. This cajun dish was passed down from my great grandmother. Lots of crawfish and cheese sauce loaded in French bread.

Ingredients

1 loaf french bread gutted

1 package (1 lb) crawfish fresh shelled or frozen from grocery

1 medium package cheese shredded, divided

1/2 cup mayonnaise

1/2 cup green onions

1 teaspoon cajun seasoning

1/4 cup mustard

1/4 stick butter

1 tsp lemon juice


Directions

Gut french bread loaf. In a sauce pan melt butter, add crawfish, lemon juice, and green onion. Add season to taste. Cook for 5 minutes. Add mayonnaise, mustard, and half bag of shredded cheese. After all ingredients have mixed well and cheese is melted spoon into french bread loaf. Top with remaining cheese and bake for 30 minutes.

I thought I knew Cajun food but never heard of a Pirot before...Anyway I needed an early lunch today and this was quick and absolutely delicious!
