These were an excellent alternatives to pancakes. They were more like a crepe, but by the second batch I had the hang of flipping them. Even my carb-eating family liked them. They would be delicious with some fresh berries.

Tasty. My son is on a diet so these fit his low carb needs. I couldn't make them pretty though. The are thin like crepes and tore easily. Next time i will add vanilla as suggested below.
