Creamed Corn And Red Bell Pepper

Ingredients

1 tb olive oil

1/2 c Finely chopped red bell

1 1/2 c Fresh corn kernels; (cut

3 tb Heavy cream or half-and-half

; large ears)


Directions

In a glass pie plate stir together the corn and the oil and microwave the mixture, uncovered, at high power (100%), stirring occasionally, for 5 minutes. Stir in the bell pepper and microwave the mixture at high power, stirring occasionally, for 5 minutes. Stir in the cream and salt and pepper to taste and microwave the mixture at high power for 3 minutes, or until the cream is almost evaporated. Serves 2. Gourmet June 1992

Super easy and very good...we used frozen corn and added some chopped green onion, cilantro and a couple of seeded, chopped chipotles. Delicious!
