Creamed Peas & Potatoes

Ingredients

1/2 pound Baby New Potatoes

2 tablespoons Butter

2 tablespoons Flour

1 cup Cream

1 cup Milk

3 cups Frozen Peas

1-1/2 teaspoons Chicken Bouillon Granules

Black Pepper to taste


Directions

1) Boil the new potatoes until tender. 2) Meanwhile, prepare a basic white sauce by melting the butter in a 2 qt. saucepan. Whisk in the flour and then the cream and milk. Cook over medium heat, whisking until thick and smooth. 3) With a wooden spoon, stir in the chicken bouillon and the peas and cook until heated through. 4) Drain the potatoes and add them to the white sauce. Stir in pepper to taste. 5) DO NOT OVERCOOK! You want the peas to remain crisp and not get soggy.

This was a beautiful recipe--really attractive; however, it was a little bland. Next time I'm going to add some finely diced onion, or shallot, and a LOT of salt and pepper. I served this with rubbed pork chop that I cooked in the air fryer, and it was lovely on the plate. I'm not giving up on this recipe yet, but it does need a little bit of work to make it perfect.
