Creamy Cauliflower Mashed Potatoes

Ingredients

1 medium Cauliflower ~ 8 cups

4 cloves garlic peeled

1/3 cup Skim milk or nonfat sour cream (w/o titanium dioxi

1 teaspoon butter or margarine soft

1/2 teaspoon salt

1 dash Ground black pepper


Directions

Chop up the cauliflower into florets. Place them in a saucepan of boiling water along with the garlic and cook for about 6 minutes. Drain off the liquid and put the florets in a blender. Add the butter, salt, pepper, and 1/2 of the skim milk. Puree until mostly creamy but with some slight lumps for texture. Add the extra milk as needed during the blending.
