Creamy Chicken Potato Soup in the Crock Pot

Ingredients

3 large boneless, skinless chicken breasts cut in chunks

1 24 oz. bag frozen, shredded hash browns

6 1/2 cups chicken broth (or 3 14oz cans)

2 cans cream of chicken soup

12 oz. cream cheese, cut in cubes

1 onion diced

3 ribs celery diced

5-6 carrots diced

1 can whole kernell corn drained

1 Tbsp. minced garlic (more if desired)

pepper to taste

Italian seasoning to taste (a lot is good)

12 Fresh Basil Leaves torn in pieces


Directions

Put potatoes, chicken, cream cheese, onion, carrots, celery, corn, garlic, and seasonings in a crockpot. (Fresh basil added at the end) Mix together the cream of chicken soup and the chicken broth. Pour over everything in the crock pot. Cook on low for 6-8 hours, stirring occasionally until chicken is fully cooked and flavors are well incorporated. Add Fresh Basil and cook another 5-10 minutes. Enjoy!
