Creamy Lemon Basil Dressing

A great dressing for a chopped salad.

Ingredients

2 tablespoons Egg yolks

1 1/2 tablespoons Dijon mustard

2 tablespoons Water

3/4 teaspoon Salt

1/8 teaspoon Pepper

1/4 cup and 1 1/2 tsp Lemon juice

5/8 Quarts Canola Oil


Directions

Step 1: Place yolks, mustard, and water into a container Step 2: Add salt and pepper to container. Mix with burr mixer on low. Step 3: Add lemon juice to container. Step 4: Add oil to container slowly while mixer is running on high. Dressing should be creamy and emulsified. Step 5: Stir chopped basil into dressing.
