Creamy Roasted Cauliflower Soup

Ingredients

1 head Cauliflower florets

3 tablespoon EVOO

As needed Salt

1 medium Onion chopped

2 cloves Garlic minced

4 cups Beef stock

2 tablespoon Butter

1 tablespoon Lemon Juice

1/4 teaspoon Ground nutmeg


Directions

1. Preheat oven to 425 and roast cauliflower. 2. Sweat onion and garlic. 3. Add stock and cauliflower. Simmer 20 min. 4. Puree until smooth.
