Creamy Wholemeal Pasta Bake

Ingredients

500 g Wholemeal Pasta

500 g Frozen vegetables

160 g Baby spinach

4.5 tablespoons Cornflour

3 cups Milk

300 g Ricotta

20 g Veg Stock

1.5 g Nutmeg

150 g Cheddar cheese grated


Directions

1. Preheat oven to 200C & spray baking dish with oil 2. Cook pasta, add frozen veg for the last 2 mins 3. Stir through spinach to wilt then drain 4. Add milk, ricotta and stock powder to a small pot and mix in cornflour solution. Boil and thicken then season with nutmeg and pepper 5. Pour over pasta and stir. Transfer to baking dish and top with cheese. Bake.
