Ingredients

2 3/4 cups unsalted chicken stock (such as Swanson)

1 cup fresh orange juice (about 4 oranges)

1/2 cup chopped cilantro stems

1 medium orange quartered

1 3/4 teaspoons kosher salt divided

1 1/2 teaspoons freshly ground black pepper divided

4 center-cut bacon slices chopped

1 (2 1/2-pound) bone-in pork shoulder trimmed

1 pound dried black beans

2 1/4 cups chopped onion divided

10 garlic cloves crushed and divided

1/4 cup chopped fresh oregano divided

2 teaspoons paprika

2 teaspoons ground cumin

1 1/2 teaspoons crushed red pepper

1 bay leaf

1 1/2 cups chopped tomato

1 jalapeño pepper seeded and thinly sliced

2 2/3 cups hot cooked white rice

1/4 cup chopped fresh cilantro

My hubby and I loved this! The pork was super tender, the beans were delicious. Didn't make the salsa and did not use cilantro as I'm allergic. We did find that while the pork was tender, it didn't have a lot of flavor itself. We will probably play around with spices until we find the alternatives that make it work the best for us! Great recipe!

The pork is phenomenal. I did this the way it was written first. I didn’t like doing my black beans this way. It means that all the food just tastes the same. I don’t mind a slight citrus flavor to my beans but the orange was overpowering.
