4 sweet potatoes peeled and cut into quarters

1 medium onion thinly sliced

2 cloves garlic chopped

1 teaspoon grated ginger

1/2 cup no-salt-added or low sodium vegetable broth

1 teaspoon curry powder or more to taste

pinch red pepper flakes or to taste

1 bunch mustard greens chopped

1 1/2 cups diced tomatoes

1 1/2 cups cooked chickpeas or 1 (15 ounce) can no-salt or lo drained and rinsed

1/4 cup unsweetened soy hemp or almond milk
