Curried Vegetable Soup

Ingredients

1 16-oz package frozen vegetable medley such as broccoli

1 14-oz can vegetable broth

3/4 cup uncooked instant brown rice

2 teaspoons curry powder

1/2 teaspoon Salt

1/2 teaspoon hot pepper sauce

1 14-oz can unsweetened coconut milk

1 tablespoon Fresh lime juice


Directions

Combine vegetables and broth in large saucepan. Cover: bring to a boil over high heat. Stir in rice, curry powder, salt and pepper sauce to taste; reduce heat to medium-low. Cover and simmer 8 minutes or until rice is tender, stirring once. Stir in coconut milk; cook 3 minutes or until heated through. Remove from heat. Stir in lime juice. Ladle into shallow bowls and serve immediately.

For a lighter soup with less fat & calories, substitute light unsweetened coconut milk. [I posted this recipe.]
