1 1/4 cups whole milk

1/2 cup heavy cream

2 large eggs

4 teaspoons sugar

Pinch of salt

About 1 tablespoon unsalted butter at room temperature

Maple-Strawberry Syrup:

1 1/2 cups pure maple syrup

3 cardamom pods cracked open

2 cups sliced fresh strawberries

Filling:

3 cups Homemade Ricotta or good-quality fresh whole-milk

2 large egg

1/4 cup sugar

1/2 teaspoon kosher salt

1 cup sour cream

For the Homemade Ricotta:

4 cups whole milk

1 cup heavy cream

3/4 cup buttermilk

1 tablespoon fresh lemon juice
