Cutout Sugar Cookies

Use electric mixer to cream butter and sugar together until smooth Add egg and vanilla extract Add baking powder Add flour, one cup at a time and mix well *Need to mix by hand at this point Cover dough and refrigerate for at least 1 hour Preheat oven to 400° F After refrigeration, divide dough into four parts and roll out on a floured surface until it is 1/8" thick Cut out cookie shapes and place on an ungreased cookie sheet Bake 6-7 min or until lightly brown Remove from oven and use a spatula to place cookies on wax paper to cool *Optional: Cover with homemade icing after the cookies have cooled down
