4 Eggs
2 Avocados peeled, pitted and mashed
1 tablespoon Cilantro chopped
1 tablespoon Green onion minced
2 teaspoons Jalapeno peppers seeded and minced
2 teaspoons Lime juice
1/2 teaspoon Hot pepper sauce
1 teaspoon Worcestershire Sauce
1 teaspoon Dijon mustard
1/2 teaspoon Paprika
salt and pepper to taste
Yummy. I only used 1 avocado and that was plenty. I plan to keep this recipe handy.
gerritylerMine turned an unappetizing color of dark green. I threw most of them away. I did like the taste of the mixture right after I made them, but they soon turn dark green

Felix1incI used one avocado for a dozen eggs, because I was worried about the appearance of green eggs. Still, the avocado imparted a creamy texture and taste to the eggs!
