Diabetic/low-carb Fudge Candy

Ingredients

13 ounces Evaporated Skim Milk

4 tablespoon Cocoa Powder

1/2 cup Peanut butter

1/2 cup Splenda

2 dashes Salt

1 teaspoon Vanilla extract

3 cups Corn Flakes crushed

2/3 cup Nuts finely chopped


Directions

Combine evaporated milk and cocoa in saucepan. Cook and beat over low heat until cocoa in dissolved. Add peanut butter, Splenda, salt and vanilla extract. Bring to a boil; reduce heat. Cook for 2 minutes. Remove from heat; add cereal crumbs and work in with wooden spoon. Cool 15 minutes. Divide in half; roll each half into a tube 8 inches long. Roll tubes in finely chopped nuts. Wrap in waxed paper; chill overnight. Cut in 1/4 inch slices.Yield: 64 slices

I tried this recipe. I'm not a big fan of the corn flakes. It came out crumbly. Maybe I did something wrong.

The catch is to eat ONE piece, but only if you make the changes finnfras suggests! I wonder--is the author diabetic or an expert? Substituting splenda for sugar helps--but milk, cornflakes, etc. have tons of carbs, too, making me think there's some confusion here. But with finnfras's changes, it might fit into someone's plans. It's really important to know the carb count per slice, as too many diabetics (like the rest of the population) have serious problems with portion control. This sounds like a decent choice if you can stick with ONE piece!

why does it have corn flakes in it, and can you make regular fudge and just use splenda instead of sugar> do you need to add peanut butter>
