Dijon Roasted Whole Red Potatoes

I found this recipe on the side of a bag of VIP whole red potatoes

Ingredients

16 ounce

4 tblspoons Dijon mustard

2 teaspoons Paprika

1 teaspoon Cumin

1 teaspoon Chili powder

1/8 teaspoon Cayenne pepper

Cooking spray


Directions

Preheat oven to 400F. Spray a roasting pan several times to coat with the vegetable oil. Put the mustard, paprika, cumin, chili powder, and cayenne pepper in a large bowl. Wisk to blend. Prick the potatoes several times with a fork and add them to the bowl. Toss to coat the potatoes evenly. Pour the coated potatoes into the prepared roasting pan, leaving a little space between them. Bake approximately 45 to 60 minutes, until potatoes are fork tender. Serves 4.

I couldn't wait to try this recipe but was very dissapointed. I planned to serve this at a small dinner party and had everything on schedule to be done at a certain time. However the potatoes required an additional 1/2 hour cooking at 400 degrees (total time cooking 1 1/2 hours) They were not moist at all and I had to slather them with butter before setting on table. The taste was good but not what I expected. Sorry!
