DOUBLE CRUST PIE PASTRY

Ingredients

2 2/3 cups Flour

1/4 teaspoon Salt

3/4 cup 1/4 diced

1/4 cup Chilled shortening or lard diced

2 Egg yolks

6 tablespoon Ice water


Directions

IN BOWL, whisk flour and salt. CUT IN butter and shortening. STIR IN WATER TRANSFER to surface and gently pat together. DIVIDE into two discs (1 slightly larger than the other) WRAP in plastic and refrigerate for 30 minutes. MAY BE MADE 2 DAYS AHEAD AND REFRIGERATED.
