Preheat oven to 425. Spray a 9×13 pan with nonstick spray. Spread tater tots out in an even layer and bake until golden brown and crisp, about 30 minutes.
Meanwhile, bring a large skillet to medium heat. Add both beans, water, and taco seasoning. Stir until evenly mixed and let simmer for 10 minutes, stirring occasionally. Turn heat down to low and let thicken.
Make the queso:
Melt butter in a medium saucepan. Add garlic and whisk in flour until free of lumps. Whisk in cream until well-combined. Cover and simmer until thickened, stirring occasionally, about 10 minutes. Do not boil. Whisk in cheeses and salt until cheese is completely melted.
Spread a few spoonfuls of queso on a soft taco shell. Stick a hard shell on top and wrap the soft shell around it, using the queso like glue. Stuff shells with bean mixture, tater tots, and whatever toppings you like. Drizzle with more queso.
A Few Tips Before You Get Cooking :
Add any toppings you prefer: onions, sour cream, more cheese, etc. This is a great evening meal because it’s so quick and easy but so unbelievably satisfying. I 100% promise this will knock your family’s socks off. It’s also a great party dish because you can make a double batch and set up a bar for people to build there own tacos. Make sure you let the tater tots cook until good and golden brown. You’ll want that crunch.
