The intensity of the little bursts of fragrant ginger flavor, contained within these cookies, depends on how finely you chop the crystallized ginger. The cookies taste even better after sitting for a day or two...they intensify in flavor with time.

2 3/4 teaspoons Ground ginger
1 teaspoon Baking soda
1/4 teaspoon Salt
3/4 cup unsalted butter (1-1/2 sticks), softened but still cool
1 1/2 cups granulated sugar divided
1 large egg at room temperature
1/4 cup unsulphured molasses
3 tablespoons crystallized ginger finely chopped

Valerie411I really like this recipe but apparently I also like my cookies bigger than the recipe intends. I made a double batch for a cookie swap and it only produced about 60 cookies, the last twenty much smaller than the first 40. I also added some extra spices: 12 tellicherry peppercorns, 2 cloves, 1 star anise, and 1/4 tsp of fresh ground nutmeg all ground to a fine dust. My cookies didn't turn out as dark as the ones in the posters picture but I don't think I would want to put anymore molasses than called for in the recipe.
Haobaba1I really liked this recipe, next time i make it i think i will leave the crystalised ginger chunks a little bigger as I really liked the burst of ginger you get from it. Thanks for the recipe.
cc_holtSince the cookies are fairly dark, it's difficult to judge doneness by color. Instead, gently press halfway between the edge and center of the cookie. When it's done, it will form an indent with slight resistance. Check early and err on the side of underdone to achieve the great texture of these cookies. [I posted this recipe.]
