Duncan Brown's Gourmet Grilled Chicken BLT

A scrumptious medley of a traditional BLT and grilled chicken kicked up a notch.

Ingredients

3 Breasts Chicken Butterflied

1 Lb Bacon

1 Head Romaine Quartered

1 Avocado Halved

1 Loaf French Stick/Baguette Sliced on a Bias

6-12 Cherry Tomatoes Whole

6 Slices Provolone Cheese


Directions

Preheat your BBQ to 350 degrees. Prepare your 3 Chicken Breasts by "Butterflying" them (slice them half way through along each length). Keep the breasts in a separate plate - lightly drizzle olive oil along with salt and pepper. Quickly wash up for the next steps... Fry your bacon in a skillet or frying pan. Once fried to a golden crisp - carefully lay the strips of bacon on paper towel. Keep warm in your oven. Its Grilling Time! Place the chicken breasts on the BBQ and grill for 5-7 minutes per side. Pull off the BBQ and keep warm in your oven with the Bacon .... mmm Now, take the tomatoes and "quartered" romaine lettuce and quickly BBQ. The Tomatoes are done when they split. BBQ the romaine quickly ... like 1 minute quickly. Remove and plate for final assembly. The French Stick or Baguette is best sliced on a bias (angle). Lightly brush each slice with olive oil (both sides please). Quickly BBQ the slices for 30 seconds on each side. Remove, plate and keep warm in oven. Quick Sauce... Mayo + Olive Oil + Graded Parmigiano cheese = yum. In a small bowl, stir together 2 Tablespoons of Mayo with 1 Tablespoon of Olive Oil and 1 Tablespoon graded parmigiano cheese (the real stuff is best). Its Assembly Time! Take 8 of your favorite appetizer plates. - Lay a slice of grilled baguette on each plate -Spread your Mayo sauce on each baguette -Place a halve to 1 slice of Provolone cheese - Then lay some grilled chicken breast - a small amount per Baguette - Followed by fresh grilled romaine and freshly grilled tomatoes - sliced avocado, cut up bacon, topped with a sprinkle of Parmigiano Cheese. - Add a parmigiano cheese/olive oil/mayo drizzle
