This is the most simple pumpkin recipe I have ever come across. You can make them into a bread, muffins or even cookies (cooking times will vary). Because there is no eggs, oil/butter, salt, etc this is perfect if you're on a diet.

1 Box White cake mix or yellow cake mix
1 (15 oz)can Pumpkin
I made this 3 different ways this morning. To Each I added 15 oz fresh pumpkin with some nutmeg, gr. clove, cinnamon and all spice added. I did also add to all 3 recipes 3 eggs, 1/2 to 1 cup water (depend upon the consistency I needed), 1/4 cup oil. 1st cake was a bundt cake. Made with the above Ingred. and a white cake mix. I added about a cup of walnuts and baked it at 350 for about 45 minutes. T2nd was with a chocolate cake mice I don't do anything fancy to it just basic. The 3rd I made into cookies. I had to adds cup of all purpose flour to the mix to make it cookie consistency. This way the cookies didn't flatten out when baking. I also added chocolate chips to the batter. They took about 8-10 minutes to cook. The cookies are light and really yummy tasting.
Kla18252This recipe will take some experiments to perfect. We made it last night with white cake mix, pumpkin, 1/2 cup chocolate chips, 1/2 cup chopped pecans, pumpkin pie spice, nutmeg and 1/3 cup water. The batter was extremely thick and the muffins were tough to eat because of their texture. We will try it next time with 1/2 cup milk and maybe even an egg.
