Ingredients

1 package lemon cake mix

2 Eggs

1/3 cup Vegetable oil

1 teaspoon lemon extract

1/3 cup confectioners sugar

2 tsp lemon zest

Directions

1. Preheat oven to 375F / 190C. 2. Pour cake mix into a large bowl. Stir in eggs, oil, zest, and lemon extract until well blended. Drop teaspoonsful of dough into a bowl of confectioners' sugar. Roll them around until lightly covered. Once sugared, place them on an ungreased cookie sheet. 3. Bake for 8 to 9 minutes.

Very easy to make. Opted for sugar cookies and substituted vanilla cake mix and vanilla extract. Dough is soft, so placed in fridge about 30 minutes before baking and then put back into fridge between bakings. A big hit for the holidays.
