Outstanding. I was looking for a use for beer broth that was left over after beer boiling some ribs and I found this recipe. The beer I used was a pumpkin ale. I went with the normal swiss cheese rather than the stilton. This soup rivals the best I've had from restaurants.
bgouletThis is a rich and flavorful soup--a great dish to beat the January winter blues. Use less or more Stilton (or bleu cheese) to enhance or tone down the flavor. Serve with bread and croutons--splendid!
