Easy Onion Soup with Stilton

Ingredients

1 oz Butter per person

2 md Onions per person; chopped

Salt

Fresh thyme or winter savory

1/2 pt beer and stock, each

Black pepper freshly ground

Stilton

Croutons


Directions

TWO FAT LADIES SHOW #FL1A06 In a heavy saucepan heat the butter and saute the onions slowly until golden brown. Season with salt and pepper. Add the liquid and bring to a boil. Adjust the seasoning and add thyme. Cover and simmer for 30 to 40 minutes. If you are using Stilton rind, grate it finely. Otherwise, chop the cheese. Outstanding. I was looking for a use for beer broth that was left over after beer boiling some ribs and I found this recipe. The beer I used was a pumpkin ale. I went with the normal swiss cheese rather than the stilton. This soup rivals the best I've had from restaurants.

This is a rich and flavorful soup--a great dish to beat the January winter blues. Use less or more Stilton (or bleu cheese) to enhance or tone down the flavor. Serve with bread and croutons--splendid!
