Easy Vegetable Soup

This has an amazing amount of flavor for something so nutritious!

Ingredients

2 teaspoons Vegetable oil (adjust as needed)

2 medium Onions chopped

2 14-oz cans chicken broth

2 cans tomato-vegetable juice cocktail (11.5 ounce)

1 large sweet potato (or regular potato), diced

4 carrots sliced

4 Celery diced

2 cans diced tomatoes (14.5 ounce)

2 cups fresh green beans ,chopped ( if in season)

1 cup fresh corn kernels or a small can of crisp corn

2 cups zucchini or yellow squash or both, diced

vegetables Any other, chopped

2 tablespoons Creole seasoning (more or less to taste)


Directions

In a large stock pot, saut chopped onions in a bit of oil. Then add everything else to the onions. You may need to add 1-2 cups of water, depending on how thick you want it. Bring to a boil and simmer for 30 minutes or until all vegetables are tender

Made this not too long ago and we used red potatoes instead of sweet and still tasted good!

Can use "Better than Bouillion" and water instead of chicken broth - it still tastes great. [I posted this recipe.]
