Edamame Tofu Dip

Ingredients

1/2 cup edamame

1/2 teaspoon fresh ginger

1 medium scallion

1/4 teaspoon Toasted sesame oil

1 teaspoon Soy sauce

7 ounces Tofu

1 teaspoon Sea Salt

1/2 teaspoon Ginger

1/2 teaspoon Garlic powder

1 1/2 Tablespoons MCT Oil

2 Tablespoons Sake

1/4 teaspoon Black pepper


Directions

boil frozen edamame for 4 minutes and let cool. dice ginger and scallion, add to food processor bowl with edamame. Pulse until finely chopped, scraping down occasionally. Add all other ingredients and process ~2 minutes until smooth. Serving size = 1 ounce
