Egg and Bacon Fajitas

Ingredients

1/4 ts Pepper

8 lg Eggs

1/4 c scallions Sliced

2 ts Butter or margarine

4 oz Canadian bacon Sliced

1/2 ts Salt

4 Fatfree flour or lowfat flour

1 tb Dijon mustard


Directions

Heat tortillas as directed on package. Meanwhile, whisk eggs, scallions, mustard, salt and pepper in a large bowl until blended. Melt butter in a large nonstick skillet over medium-high heat. Add bacon and cook 2 minutes, stirring occasionally, until golden in spots. Add egg mixture and cook, stirring often, until set. Place 1/4 of the egg mixture in the middle of each tortilla. Fold 1 end of tortilla about 1 inch over egg mixture. Fold right and left sides over folded end.
