Escarole and beans

Ingredients

3 Heads Escarole

Extra virgin olive oil

Fresh garlic, peeled

Salt

Black pepper

Red pepper flakes

Cannalina beans

Water


Directions

1. Cut stems off escarole. 2. Clean, making a slit in the white part for easier cooking. 3. Bring water to a boil, adding salt to the pot. 4. Add escarole to the boiling water and cook until soft; about 20 minutes. 5. Drain in colander, cutting the pieces with scissors. 6. Put pan back on stop and add olive oil, covering bottom of pan. 7. Add minced garlic and saute until soft. 8. Add escarole and fry, approximately 10 to 15 minutes. 9. Add salt, pepper, and red pepper flakes during cooking. 10. Add beans. Add a 1/2 can of water to each can of beans. Add more water if you want it soupier. 11. Let simmer for about 10 minutes, depending on how hard the beans are.
