- Combine lentils, bulgur, and rice in a strainer. Rinse until water runs clear. Set aside.
- Heat butter and olive oil in medium/large pot.
- Add onion and saute until translucent.
- Add flour and stir until completely combined.
- Add tomato paste and stir until combined.
- Add broth and salt, and bring to a boil.
- Add rinsed lentils, bulgur, and rice. Stir.
- Simmer for 20 minutes.
- For the drizzle, heat butter until melted and stir mint and red pepper flake.
- Serve soup hot with a drizzle of the mint mixture on top, to taste.
