Fennel Puree

Ingredients

2 Fennel Quartered

3 Fresh rosemary

1 tsp Chiles

5 cloves Garlic

2 tbsp Olive Oil

1 tbsp Creme Fraiche

1 tbsp Parmesan grated

1 tbsp Butter

1 tbsp English mustard

3 Anchovies

1 Lemon zest and juice


Directions

1 Preheat oven to 200C. Place fennel quarter on a tray with rosemary, chilli and garlic, drizzle with olive oil and season. Roast for 20min. 2 Cool slightly and blitz with remaining ingredients
