Measure 1 cup of parsley leaves and reserve some for garnish. Combine with basil, garlic, nuts, oil, and Parmesan in a food processor or blender and blend until smooth. Blend in mayonnaise. Arrange the tomato slices on a plate. Top each with the parsley-basil mixture, sliced mozzarella, cucumber and olives. Garnish with the reserved parsley leaves.
